Abstract
The peas is the most commonly green, occasionally purple or golden yellow, pod- shaped vegetable, widely grown as a cool seasonvegetable. Green peas (Pisum sativum), an important legume plant, is perishable as well as seasonal in nature and contains about 78%moisture. Peas were hand washed and then samples were prepared. The various pre-treatment given to the peas and sample was preparedwithout giving any pre-treatment and was designated as untreated sample. Second sample was prepared by blanching in 1%, 2%, & 5%NaCl at 80
