Abstract
The purpose of this research was to investigate the quality and storage life of blanched and without blanched Jamun fruit pulp, extractedmanually and by using developed Jamun pulp extractor for period of 180 days. The quality of pulp extracted by machine was compared withquality of pulp extracted by manual. The findings indicated that the pH, TSS and reducing sugar of stored Jamun pulp was found to beincreased with increase in storage period, whereas titrable acidity, ascorbic acid of the Jamun pulp were found to be decreased withincrease in storage period. The microbial load was found to be more in without blanched Jamun fruit pulp than blanched Jamun fruit pulp.Jamun pulp extracted by developed Jamun pulp extractor could be stored at -18 to -20 oC with no preservative for 180 days with acceptablerange of sensory and microbial quality.
