Abstract
Peas are preserved by freezing in pea processing industries because of seasonal limitations; there is a vast amount of pea peels as solid wastegenerated. Pea by-products represent rich sources of various nutrients. The aim of this work is to investigate the nutrients content in pea shellpowder. In this connection, a fibrous coat of pea shells was separated and prepared powder with digestive layer to perform nutritional analysis.The study result indicates that pea shells have higher moisture content (90%). The functional properties of pea shell powder e.g. swelling capacity(7.12 ml/g), bulk density (0.94gm/ml), oil holding capacity 91.97gm/oil/gm sample), water holding capacity (4.21 gm/ml), fat absorption capacity(1.16 %), and water absorption capacity (5.89 ml/gm) were obtained.
